Making a wine is – from pruning the vines to soaking its branches; the judicious defoliation of the plant, exposing the fruits to the sun's rays and excessive thinning of the grapes; from the rigorous determination of the time of harvest to the exclusion, in the cellar, of unsuitable fruits for the composition of the best musts, the monitoring of fermentations and evolution in vats and barrels – an act of love.
